Tasting Note: Pedro Ximénez is the Sherry grape varietal that produces one of the sweetest, most luscious dessert wines on the planet, and it is a fun mixer to add to a glass of dry, sparkling wine.

Medium-intensity brown in color, this wine has a pronounced, aromatic nose of raisin, honey, fig, marmalade, dried apple, dried apricot and caramel.

On the palate the luscious, full-bodied Pedro Ximénez is mouthcoating in texture with ripe-and-candied-fruit flavors suggested on the nose ultimately completing with a long, caramel-infused finish.

The wine has flavor concentration and balance between its fruit and alcohol profile.

Pedro Ximénez goes a long way and can also be used as a syrupy topping on vanilla ice cream (as I also deliciously discovered).

Bottle Note: Sign to mark the Pedro Ximénez “Soleras.” Each has the highly individual taste of its very sweet grape variety, rich and unctuous. They can be enjoyed at room temperature or chilled.
