Domaine Jaulin-Plaisantin, Les Hauts & Les Bas Chinon 2016, Loire, France
Tasting Note: A Chinon that captures the essence of the classic style that I adore so much because it is earthy and terroir specific.
Deep-intensity ruby in color, this wine has an aromatic, medium-plus-intensity nose of pencil shavings, black tea, black plum, crushed-dried violet blossom and forest floor with hints of young cedar.
On the palate the dry, medium-plus-bodied Chinon has medium-plus-intensity flavors suggested on the nose supported by velvety, medium-plus tannin ultimately completing with a long finish.
There is complexity in the midpalate that tends towards savory and black tea.
Chinon in the style I adore.
