Tasting Note: An enjoyable, 30-year-old sherry that is a palomino and Pedro-Ximenez mix.
Deep-intensity brown in color, this wine has a nose of dried oak cask, yeast, knotty bread dough, chocolate, butterscotch and cooked-dried fruit.
On the palate the off-dry, sherry delivers flavors suggested on the nose with the Pedro Ximenez grape adding a bit of sweetness but still almost-seemingly dry on the palate.
Bottle Note: A classic sweet oloroso. Time, oak and the Pedro Ximenez grape in perfect harmony. Aromas of raisins, dates, spices and roasted coffee beans. Ideal with dessert and mature cheese. Palomino 75%, Pedro Ximenez 25%.
