Tasting Note: Behold the rare and elusive white pinot noir.

Deep-amber colored tertiary aromas of vanilla and caramel leap out ahead of understated green fruit aromas.

On the palate the smooth, full-bodied, dry white is medium-plus in acidity on the attack finishing with caramel and vanilla.

Not immediately, but at some point after sampling this wine, you are reminded of an oaked chardonnay style done with the delicate pinot noir red grape.

Polarity has depth and is something different, unexpected and new. Could oaked white pinot noir be the next new thing in wine?

Bottle Note: po•lar•i•ty: noun. 1. A relation between two opposite attributes or tendencies. 2. Heart & Hands Wine Company white wine made from 100% pinot noir grapes. The hand-picked grapes are sorted and gently whole-cluster pressed. Contact with the red pinot noir skins is minimized and the resulting juice is clear. The juice is transferred to the barrels where it undergoes fermentation. Once the fermentation is complete, the winemaker gently stirs the lees every couple of days to enhance the mouthfeel and richness. The wine finally bottled after nine months in the barrel. Heart & Hand Wine Company overlooks the northeastern shores of Cayuga Lake. We are committed to quality, and utilize gentle gravity flow methods of production to preserve the essence of the fruit.
