Tasting Note: A Palo Cortado with 25-years of age like this Viejo C.P. is a pleasure to enjoy if only because of its rarity, but it’s even nicer when rarity and flavor combine beautifully in your glass.
Medium-intensity amber in color, this wine has an aromatic, medium-plus-intensity nose of buttered brioche, toasted hazelnuts, rancio, dates and just the faintest hints of brininess belying its biological-aging beginning.
On the palate the dry, full-bodied Palo Cortado Sherry has medium-plus-intensity flavors suggested on the nose ultimately completing with a buttery, medium-plus finish.
The midpalate is complex and rich.
Bottle Note: Viejo C.P. is a single vineyard Palo Cortado made with Palomino grapes from our “Marcharnudo Alto” vineyard. Last Criaderas of Viejo C.P. are topped with a selection from the youngest stages of Inocente Fino and Tío Diego Amontillado to continue with a long oxidative aging.
