Tasting Note: An 8-year-old en rama (bottled directly from the barrel with no filtration) fino sherry that is the Angela Basset of fino sherries; it may be 8-years old but plays in a 5-year-old fino’s sandbox capturing the ever-present struggle between experience and youth in your glass.
Medium-intensity lemon in color, this wine has a pronounced-intensity, aromatic nose of biscuit, yeast on steroids, slightly-cooked bread dough, lemon-citrus peel and grilled walnut and almond.
On the palate the dry, medium-bodied fino sherry has medium-intensity flavors suggested on the nose supported by medium-plus acidity.
There is midpalate concentration underpinned by a brightness that runs throughout the length of the taste.
Bottle Note: For almost two centuries Tio Pepe cellar masters have used the “Palma” chalk mark system in our bodega. Traditionally the Palma mark was used on barrels to indicate wines of exceptional finesse and delicacy of aromas. The more Palmas on the barrel, the greater the maturity of the wine. Fino Dos Palmas is a selection from just two very old Tio Pepe casks, aged for 8 years under flor through the traditional solera system. It is bottled “en rama” without filtration or clarification.
