Tasting Note: A cabernet franc that is done in fun, fruity carbonic style that is popular in Beaujolais but with cabernet franc instead of gamay.

Medium-intensity ruby in color, this wine has an aromatic, medium-plus-intensity nose of fig, red currant, red plum, raspberry, red cherry and rosehip.

On the palate the dry, medium-plus-bodied cabernet franc had medium-plus-intensity flavors suggested on the nose with some tart, red-fruit notes on the midpalate mixed with just-ripened fruit.

The wine is medium in acidity with ripe, medium tannin.

Who knew carbonically-fermented cabernet franc could be so delicious?

Pairs well with lighter fair and with fall weather.

Bottle Note: The fruit character is the star in the unoaked cabernet franc, which was fermented slowly at a low temperature as whole berries to promote and preserve its punchy and brambly red fruit flavors. Gentle aging entirely in stainless steel makes for a bright and juicy palate, while the standout vintage provides plenty of texture and nuance to the wine. Drink slightly chilled with rustic preparations of lamb, duck or venison. Or, try it with your favorite soft cheese and charcuterie.
