I attended great presentation by Adam Waddell on the Cava DO held at CorkBuzz NYC.
I adore cava as the proletariat’s traditional method wine and enjoy it more often than any other bubbly.
We tasted Pares Balta Blanca Cusine 2012, Maset L’avi Pau Gran Reserva Brut Nature, Anna de Cordorniu Blancs de Blancs and Anna de Cordorniu Brut Rose.
A vintage 2012 cava costs just as much as an entry-level Champagne and is such a greater value complete with notes of brioche.
There are some new classification rules going into effect in January 2021 that you may be interested in learning more about.
